Could anyone recommend a good book that talks about information gathering using the Internet ideally just using free open source tools?

I would recommend the following book:  Open Source Intelligence Techniques by Michael Bazzell.
The easiest thing to be in the world is you. The most difficult thing to be is what other people want you to be. Don't let them put you in that position. ~ Leo Buscaglia

I've been meaning to pick this up https://www.amazon.com/gp/product/0995687544/
But I ended up just looking at various talks on the topics that I was interested in on youtube.

+1 on Bazzell. Make sure you subscribe to his newsletter as he keeps coming up with great updated stuff on a regular basis.

Cybrary has some free OSINT training. There are plenty of other free resources. Just do a Google search on free osint training.
